Boiled Shrimp with Chipotle Crema

Boiled Shrimp is one of the easiest methods to cook shrimp. A quick and easy appetizer for entertaining and the creamy chipotle dipping sauce takes the shrimp to the next level.

Shrimp is one of my go-to choices when entertaining as it is a crowd-pleaser and fairly easy to cook in under 15 minutes. Shrimp freezes beautifully, so I always have a few pounds on-hand. When it comes to preparing shrimp, simplicity is best – one of the easiest ways to get flavorful results is to boil it.

Boiling shrimp produces succulent, tender shrimp plus the shrimp will take on flavor quickly when you add seasoning to the water. I like to use cumin, coriander or old bay. I also like to beer or wine to my water, along with a few slices of fresh lemon. Today I am keeping my it simple by just adding a few slices of lemon to the water since I will be serving my shrimp with a creamy chipotle dip.

Peeled shrimp will cook in under three minutes and unpeeled shrimp will tale about five minutes per pound. Once you remove the shrimp from the boiling water, run under cold water and place on ice to stop the cooking process. Over cooking will results in tough, chewy shrimp. No Bueno.

The dipping sauce I serve with my shrimp is a creamy chipotle concoction that takes no time to make. Sour cream, fresh lemon juice, and chipotles seasoned with salt and pepper y listo.

I serve my boiled shrimp over ice on a platter, with tiny bowls of the chipotle crema. I place the place the platter in the center of the table and guest are free to nibble as the please. Simplicity at its best. My boiled shrimp couldn’t be easier, couldn’t be tastier, and of course, I couldn’t resist sharing them with you. Happy boiling.

Boiled Shrimp with Chipotle Crema

Yield 4 Serves

Ingredients

10-12 cups water

1 tablespoon salt

2-3 fresh lemons, sliced

1 pound raw, peeled shrimp

1 cup sour cream

2-4 teaspoon fresh lemon juice

2 chipotles in adodo, finely diced

Salt

pepper

Instructions

Bring water, salt and lemon slices to a rolling boil. Add shrimp, stir, cover and cook for 3 minutes or until all shrimp are light pink. Remove from heat, drain and run under cold water. Transfer shrimp to a platter, allow to cool and place in fridge. When ready to serve, place shrimp over ice and serve with chipotle crema.

For Chipotle Crema: Stir together sour cream, 2 teaspoons lemon juice and chipotles until well combined. Season with salt and pepper, add additional lemon juice if desired.

Notes

Crema can be made a day in advance.
