I adore homemade horchata. Horchata (pronounced or-CHAH-tah) is a Mexican drink made with rice. Flavored with cinnamon, sugar or nuts and seeds this creamy beverage is popular served over ice in summer.
Horchata is a dreamy, creamy rice-based Mexican drink that is can be found in any taqueria here in South Texas. South Texans drink gallons and gallons of Horchata throughout the year, but in Summertime it is especially popular. We can’t get enough of this white as snow refreshing agua. Horchata can be made with rice and almonds, with cinnamon, berries, melon or coconut –all amazing, all refreshing served over ice on a warm day.
I made a double batch of coconut horchata for Mother’s Day since I knew my mami also loves horchata. We sipped on it all day over plenty of ice and garnished with toasted coconut. I placed the leftovers in the fridge to serve for brunch the next day. During the day I brewed an extra pot of coffee, allowed it to cool then placed in the fridge to chill.
For brunch, we mixed in the coconut horchata in our iced coffee – delish!

I suggest keeping a container of chilled brewed coffee in the refrigerator all summer long for a cool pick-me-up. Add coconut horchata y listo!
