Moist, perfectly seasoned, and easy to shred โ€“ my slow cooker guajillo chicken is tender and juicy. Made with chicken breasts, guajillo chile, tomatoes, chicken broth cooked low and slow in the slow cooker.

My slow cooker guajillo chicken is one of the very best weeknight shortcuts to create meals for the week.

From tostadas, flautas, taquitos, tacos, chicken enchiladas, sopitas, burritos, sopes, to nachos shredded chicken makes meal planning a snap.

How to Store Slow Cooker Shredded Chicken

Shredded chicken is one of my to-go for a week on meals. I like to keep my fridge stocked with shredded chicken to cut down on meal-prep time and to add quick servings of protein to your meals.

Allow shredded chicken to cool completely. Place chicken in an airtight container and press a sheet of plastic against the top. Refrigerate for up to 4 days.

You can easily cook a double batch and freeze for a later use. Allow shredded chicken to cool completely. Place in freezer safe bags, rolling to remove as much air as possible before sealing. Freeze for up to 2 months.

 

INGREDIENTS NEEDED TO MAKE SLOW COOKER GUAJILLO CHICKEN

This recipe is so, so easy to make. All you need to do is add all ingredients to the slow cooker, cover and set to cook. Letโ€™s discuss the ingredients.

Chicken breasts: This recipe calls for two pounds of chicken breasts โ€“ this can be anywhere between three to five chicken breasts depending on their size.

Guajillo chile:  Guajillo peppers are fresh mirasol chiles that have been dried. Rather than spicy, their flavor profile is very fruity (think plums, prunes, and peaches), tart, tangy, and slightly smokey.

Chicken broth: Use low-sodium chicken broth to control the salt and to keep the chicken moist and juicy.

HOW TO MAKE SLOW COOKER GUAJILLO CHICKEN

Place the chicken in the bottom of a 4-6 qt slow cooker.

Scatter on the onions, garlic, dried chiles and cumin.

Add the tomatoes and broth and cover.

Cook on high for 4-5 hours or low for 7-8 hrs.

Remove from slow cooker, shred, and use to make tacos.

Ingredients
  • 2 pounds boneless skinless chicken breasts
  • 1 large onion, thinly sliced
  • 2 garlic cloves, minced
  • 2 dried guajillo chiles, stems and seeds removed
  • 1 teaspoon ground cumin
  • 1 (15oz.) can diced tomatoes, with their juice
  • 2 cups chicken broth
