Last week we had exactly two days of Fall weather. Lows in the 60’s.ย I threw open every window in our tiny apartment,ย shut off the ACย and soakedย in every ounce of crisp air.ย ย Inย South Texas any day when the temperatureย falls below 90’s is a cause for celebration.ย I had planned on celebrating with a batch of brownies.ย My kids had other plans. I sipped myย pumpkin spicedย coffee as my girlsย fiercely argued thatย on a day this perfectย “we should be at the parkย or taking a walk.”
Don’t you love kids?ย ย They were spot on. Why spend the day cooped awayย when we could immerse ourselves in Fall.ย ย In the evening as I loaded the dishwasher I thought back on our wonderful day.ย ย I couldn’t help but wonder ifย Texas would be so kind to bless us with a few more days like today.ย We shall see, but in the meantime every great day should end with a Fall margarita.ย Myย brownie celebration was put on hold for a slightlyย more adultย treat – Apple Margaritas, Enjoy!
Iย played around with the salt rim on this margarita just for fun, feel free to use only salt. ย I first thought of using theย apple skin, but the mix was too moist.ย Needing a drier textureย I tried freeze dried apples with great results.ย ย In the food processor I pulsedย freeze dried apples with salt untilย coarse.ย Run your lime around rimย and dip into apple/salt mix.ย ย Strain your fresh juice for bits of skinย or seeds.ย The color will varyย withย theย type of apple used.

In Florida we also celebrate any day below 90! My air has been off for almost a week. Hoping to hang on to the nice weather a few more days!

Hey Mercedes..give it a try I really enjoyed them, most of the apple margaritas I found were frozen with no real apple juice..yuck!!
