Guys! Texas is experiencing fall weather, and I love it. We Texans usually do not have the luxury of experiencing any fall weather and move straight to a two-week window of winter, so these current temperatures have me running to the kitchen to bake with the flavors of fall.
I enjoy baking for the holidays, I really do, but I often find it to be stressful and hurried. After Harvey, I find myself craving a fuss-free holiday season. A season of spending more time with the familia, curling up with a great book, and more and more family dinners.
This holiday season, I want to slow down, really enjoy the holidays and not feel like I am rushing from one event to the next. I’m craving long, sit-down dinners, early morning baking with my sisters and weekend brunches with plenty of warm, spiked mugs of coffee.
I’ve decided to take back my holidays and not fall into my old ways of replying yes to every dinner party invite or cookie exchange party. This fuss-free holiday season I plan to incorporate more fuss-free baking; which includes more laughter, more sharing of memories, and plenty of yummy baked items.
And with the crisp chill in the air, I find myself drawn to fall flavors, pepitas, dulce de leche and of course chocolate. Today I want to share with you an easy recipe featuring Eagle Brand Sweetened Condensed Milk plus pepitas, chocolate and dulce de leche. Dulce de leche is always a hit on the holidays with my family and friends, and I am ecstatic to see its rising popularity with home bakers – I have been receiving more and more requests to feature more recipes with dulce de leche.

When they’re warm from the oven, I lightly spread a few more dollops of dulce de leche over the bars, then sprinkled them again with pepitas. These bars are gooey, fudgy and crunchy all at the same time, and they’re super simple to make, which is always a plus. I’m excited to share these with you today, as I feel they fall perfectly into my fuss-fress holiday theme.

Dulce de Leche Pepita Bars
Yield 14 Serves
These dulce de leche pepita bars come together in a snap. The beauty of these bars is they are a one-bowl delight. A few stirs, place your batter in a pan, a few delicious dollops of dulce de leche and into the oven they go.
Ingredients
1 box brownie mix
1/2 cup vegetable oil
1 egg
1 cup pepitas, divided – no shell pumpkin seeds
1/2 cup homemade dulce de leche, plus 1/4 cup (Homemade Dulce de Leche made with Eagle Brand sweetened condensed milk; directions below)
Instructions
Pre-heat oven to 350°F. Next, liberally spray a 9×13 pan with non-stick cooking spray.
In a large bowl, stir brownie mix, oil and egg until well blended. Fold in 1/2 cup pepitas, then pour the batter into a prepared pan. Add spoonfuls of dulce de leche over batter mix before placing in the oven.
Bake for 20-25 minutes, or until a toothpick inserted into the mixture comes out clean. Next, remove from the oven, carefully place remaining ¼ cup dulce de leche over warm brownies and carefully spread.
Sprinkle with remaining ½ cup pepitas and allow to cool completely before serving.
To Make Dulce de Leche, my preferred method is as follows:MICROWAVE METHOD: Pour 1 can Eagle Brand Sweetened Condensed Milk into a 2-quart glass measuring cup. Cook on 50% power (medium) 4 minutes, stirring briskly every 2 minutes until smooth. Cook on 30% power (medium-low) for 20 to 26 minutes or until very thick and caramel-colored.
Make sure you’re stirring briskly every 4 minutes during the first 16 minutes and every 2 minutes for the last 4 to 10 minutes. Also, make sure to use potholders when removing the glass measuring cup from the microwave, as it will be hot.
