This salsa is a salsa fresca, no cooking, roasting of the chiles are needed. A few fresh ingredients, a few passes with a knife and then simply spoon into a festive bowl.

Ingredients
2 ruby red grapefruits
1 medium tomato, chopped fine
1 cup diced yellow bell pepper
1 jalapeno pepper, seeded and minced
3 tablespoons chopped red onion
1 tablespoon chopped fresh cilantro leaves
salt to taste
Instructions
Supreme the grapefruit and dice the sections. Combine with the other ingredients in a medium bowl and mix well. Allow to mellow for 30 minutes in the refrigerator for the flavors to combine.
