WHAT IS A CONCHA
A concha is a Mexican pan dulce. A sweet roll with a crunchy topping conchas gets its name from the seashell appearance. The scallop design is a sweet crunchy topping that is stamped on.
FOR THIS RECIPE YOU WILL NEED:
Conchas โ I am fond of the pink conchas, pero use the flavor you enjoy.
Vanilla ice cream – I chose classic vanilla for this recipe, pero any flavor can be used.
Strawberries โ 1 pound of fresh berries
Honey โ to sweeten the strawberries.
Lime โ I love pairing strawberries with lime, pero feel free to use lemon.
HOW TO MAKE STRAWBERRY LIME CONCHA ICE CREAM SANDWICHES
Combine strawberries, honey, lime juice and lime zest.
Let stand at room temperature until juices are released, at least 30 minutes.
Strawberries can be refrigerated, covered, up to 1 day.
Slice concha in half.
Place one or two scoops of ice cream on bottom half of concha.
Top with strawberries.
Place top of concha over strawberries.
MAS CONCHA DESSERTS:
- 1 pound strawberries hulled and sliced
- 3 tablespoons honey
- 1 tablespoon freshly squeezed lime juice
- 1/4 teaspoon lime zest
- 4 conchas
- Vanilla ice cream
