Watermelon Basil Margarita

Ingredients
  • 4 cups fresh watermelon juice
  • 1 cup tequila
  • 1/3 cup fresh lime juice
  • 1/2 cup Cointreau
  • 1 cup sugar
  • 1 cup water
  • 12-16 basil leaves
  • Salt
  • Lime wedges
  • Ice cubes
Instructions
  1. For basil simple syrup:
  2. In a small saucepan over medium heat combine sugar, water and basil; bring to a simmer.
  3. Remove from heat, set aside at room temperature to cool, at least 30 minutes.
  4. Discard basil, cover simple syrup, and refrigerate.
  5. Can be made up to 1 week ahead. Store in refrigerator in an airtight container.
  6. Rub rims of glasses with 1 lime wedge.
  7. Dip rims of glasses in salt mixture.
  8. Place glasses into freezer to chill.
  9. In a pitcher stir together watermelon juice, tequila, lime juice, cointreau and half of basil syrup. Taste; add more syrup if needed.
  10. Remove glasses from freezer and serve margarita mixture over ice.
  11. Garnish with lime slices
