Lemon Avocado Sherbet

When I was little my mom made homemade tortillas every morning for breakfast any leftovers were wrapped in a kitchen towel and left on the table.ย  For lunch she would quickly unwrap the tortillas give ’em a quick reheat, ย stuff slices of avocado,ย  aย light sprinkle of salt and lunch was served.ย  This to her was fast food not happy meals or fried chicken in a bucket.

Did we ever complain?ย ย ย Are you crazy we knew we had it good, my mom’s food was glorious, okay scratch that…her food is and continues to be glorious (love ya momo).ย ย ย ย Soย I greatly appreciate my beloved avocado as itย continues toย carry a huge love link to my mom, the only problem is I have no talent what so ever in picking perfectly ripe avocados.

I still to this day walk right past them knowing thatย I don’t stand a chance.ย  This became quite a problem when hubby realized how horrible I was at the taskย  heย knew ifย he ever wanted to eat the “greenย goodness” again he would have to take charge.ย  So for the last 10 years he has picked every avocado that has happily passed through our tummies.

Iย have never had a problem with this arrangement until I begin blogging,ย  many of the ย Mexicanย dishes that I love to share usually require the “green goodness.”ย  So I was stuck I would have to face my fearsย begin choosing my own and live with the fact that we might loose some money in the process.

So there we were at the produce aisle I’m not gonna lie I was nervousย -I knew I was facing a losing battle.ย ย ย I guessย we were there for awhile, I hadn’t noticed whenย  Chuls turns to me and saysย “mommy should I pick?ย we’re kinda in the the way.”

“Ya baby you pick,”

She quickly walked up to the mountain of avocados brushed her hand softly over the pile, picked one up, put it back, picked another, picked another, and another and we walked off.

Laterย as I was making dinner I grabbed one to slice for our tacos and thought please be perfect, please be perfect, I love my daughter.

And there it was the most beautiful avocado ever, I honesltyย wanted to cry, it wasย simply stunning.

Atย dinner ย I asked Chuls “how did you know which ones to pick?”

“They felt right,”ย she said.

Iย can’t even put into words how happy I was,ย she willย FAR surpass me in every kitchen aspesct, but what really had meย jumping for joy,ย she had saved me from avocado picking disaster.ย  Well at least until she goes to college, but then again I still have Pips.ย  Enjoy!

Lemon-Avocado Sherbet

Ultimate Mexican

Better Homes and Gardens 2010

makes 8 servings

1 large avocado, halved, seeded, peeled, and cut up

1 cup half-and-half or light cream

2/3 cup powdered suagr

1/2 tsp finely shredded lemon peel

1/3 lemon juice

In a blender combine avocado, half and half, powdered sugar, finely shredded lemon peel, and lemon juice.ย  Cover and blend until smooth.ย  Pour avocado mixture into 2 quart square baking dish.ย  Cover and freeze for at least 4 hours or until firm.

To serve, let stand at room temperature for 15 minutes.ย  Cut into squares and divide among serving bowls.

    I just tried this! I am waiting for it to freeze. I cannot wait until I can try it. I still have trouble picking an avocado. None of my family likes them so of course I have to choose. I can never tell. The one I used tonight wasnt that great but it was fine!

    Oh. My. Goodness. Avocado in frozen form? You know the way to my heart. I’ve been making frozen treats for the past while and actually never considered avocado. Brilliant!!! Will definitely have to give this a go ๐Ÿ™‚

    btw, your issues with avocados is my issues with pineapple. I think I inheirited it from my mum… ๐Ÿ™

    Avocados are used for desserts over here, not in savory foods since it’s considered a fruit over here. They have avocado ice cream, avocado cheesecake and fresh avocados are eaten with evaporated milk! I’ve gotten used to the ice cream but I still can’t take the avocado cheesecake and avocado mashed with evaporated milk. Too weird for me!

    Oh wow what a great combo. I love avocado and will have to try this. Never have I heard of such a sherbet flavor. Maybe I’m sheltered or maybe not and this may just become a famous sherbet flavor one day, you never know.

    I’m so happy you spend weekends with your girls, they grow up fast. Before you know it, poof they are gone, off to school or some other adventure!

    Send her my way. I’m a horrible avacado picker. The ones I brought home for guacamole the other weekend were nasty and rotten, so we went out and bought organic ones (only ones left) which were also gross and rotten. I still haven’t gotten my guacamole!

    I will have to make this recipe on pure curiousity of realizing a completely out of the box combo of flavours for my frozen treat ;o)

    My Mommy begs me to buy her avocados and papaya along with mangoes because for some reason…like yourself…she is not comfortable with this task. I’m like your daughter…I buy what feels right. Hey, we do all have our individual talents…which I’m sure you are blessed with many ;o)

    Thanks for popping by my website the other day. I was away a few moment after I published that post.

    I see that you are still having the avocado frenzy?
    I would love to give this creamy treat a try.

    Funny thing about choosing avocado:
    In Indonesia, I have mastered the art of choosing it. It’s pretty easy, Just shake the avocado and press the meat a little. If the stone is loose and the meat gives a little dent, then it’s nice and ready to eat.
    But New Zealand avocadoes are weird, they meat is tough and the stone never go loose. So I’m still yet to learn a few things.

    So don’t worry about not being sure about avocadoes, the more I know the more I’m unsure about it too ๐Ÿ™‚

    what a great story, and I feel for you as I too have a hard time with avocados, they are either hard as bricks are rotten when I need them … this is an interesting sherbet, one I have not seen before – what do you think it would taste like using lime???…..

    Oh yes, I like to feel my avocados like Chuls. But a culinary instructor once told me to pull off the button or stem. If it comes off easily and the color is right underneath–it’s perfect!
