Hey guys!! Chuls stopping by quickly to tell you about these spooky cupcakes we made this weekend. A chocolate cupcake with a sweet filling (cream cheese and chocolate chips) is sure to please any boy or ghoul. Halloween is a time for fun, mixed with sweet treats. Stop by soon for my next recipe. Out-of-this-world cupcakes

Ultimate Halloween
make 1 1/2 dozen
1 cup sugar
3/4 cup water
1/3 cup canola oil
2 eggs
1 tbsp white vinegar
1 tsp vanilla extract
1 1/2 cups all purpose flour
1/4 cup baking soda
1/2 tsp salt

Filling
1 pkg (8ounces) cream cheese softened
1/3 cup sugar
1 egg lightly beaten
1/8 tsp salt
10 drops neon green food coloring (we did not use)
1 cup (6 ounces) semisweet chocolate chips

Frosting
1/2 cup butter, softened
4 1/2 cups confectioners’ sugar
1 1/2 tsp vanilla extract
5 drops neon green food coloring (did not use)
3 to 4 tbsp milk

In a large bowl, beat the sugar, water, oil, eggs, vinegar and vanilla until combined. In a large bowl, combine the flour, cocoa, baking soda and salt; gradually add to egg mixture until blended. Fill paper lined muffin cups half full.
For filling, in a small bowl, beat cream cheese and sugar until smooth. Beat in the egg, salt and food coloring. Fold in chocolate chips. Drop by heaping tablespoonfuls into the center of each cupcake.
Bake at 350 degrees for 20-25 minutes or until toothpick inserted into cupcake comes out clean. Cool for 5 minutes before removing from pans to wire rack to cool completely.
For frosting in a large bowl, cream butter until light and fluffy. Beat in the confectioners’ sugar, vanilla and food coloring. Add enough milk to achieve desired consistency.
To decorate your mummies…For the nose drop a small mound of frosting in middle of cupcake and begin frosting using a basket weave tip #46 to make the wrapping. Leave small gaps for the eyes and mouth. Use a m&m for the eyes. Enjoy!!
