Today I’m transforming a holiday treat into the tastiest edible gift idea by whipping up holiday bark made from the variety box of Mexican cookies we loved growing up.
It’s not only easy to make – it makes the perfect gift for familia, friends and work buddies. I gift bark to my family, my neighbors, tutors, Roy’s Army buddies, and even my dentist. Everyone loves holiday bark.
For as long as I can remember every Christmas my mami was gifted a bag of oranges from South Texas and a box of assorted Mexican cookies. The box contains an assortment of cookies from Mexico. Barras de coco, sugar wafers or sandwich cookies.
A box from our Tia, one from our Tio, a few from Abuelito. My mami found herself wrapping and re-gifting them to her amigas at work, so they would not go uneaten.
She enjoyed a few with her afternoon café, or would crush them up over our ice ice cream or put them out when guests visited with tea.
This holiday I decided to gift a few boxes to family friends, but also picked up a few to transform them into something special for my childhood amigas who also grew up eating them.
A fun twist on the classic, a special treat to remind of us our childhood and a beautiful edible gift that can easily be made at home in under 5 minutes. I call it a Christmas win!
WHAT IS CHOCOLATE BARK?
Chocolate Bark is a sheet of silky-smooth chocolate covered with nuts, dried fruit or candy. After the bark is set it is broken up into pieces that resemble rough pieces of bark.
Bark can be made in under 10 minutes and the toppings are limitless. For the holidays we add peppermint or pecan to our bark, break it into pieces then tuck it away in a holiday tin for our friends and Familia.

TIPS ON MAKING MEXICAN COOKIE BARK
For this recipe I used white chocolate, feel free to use any chocolate you prefer.
I broke the cookies into bite sized pieces. Mix it up for a cute twist or pick your favorite cookies and have fun with it.
Add nuts and dried fruit to this bark also for added flavor. A handful of each.
Line your baking sheet with parchment paper before adding melted chocolate, this helps when removing from pan, and for quick clean-up.
Store covered for up to 3 days. Place in a parchment-lined tin for gifting.
- 1 tablespoon butter melted
- 1 (12 ounce) bag of white chocolate chips
- Assorted Mexican Cookies

Break cookies into pieces, set aside.

Line a baking sheet with parchment paper.

Brush with melted butter.

Microwave white chocolate chips on high until melted; stir until smooth.

Pour melted chocolate onto prepared pan and sprinkle with cookie pieces.

Gently push down gently to set cookies pieces into chocolate.

Set aside for at least 2 hours until firm or refrigerate for 20 minutes.

Break into pieces and serve at room temperature.
