Agua Fresca de Toronja con Chia

Did you know that February is National Grapefruit month?  I can’t think of a better way to close out the month of love, by enjoying loads of juicy grapefruits.  South Texans are addicted, obsessed with ruby red grapefruits and we use them a lot in our kitchens. Fresh grapefruit juice with our breakfast (my favorite is grapefruit, nopales) fresh segments tossed in our quinoa or salad for lunch and as a marinade for beef or chicken on the grill for dinner.

I buy them weekly in 10-15 pound bags, so we always have plenty to enjoy and this agua has quickly become our go-to beat the winter blues cooler.  Brimming with the flavor of sunshine and enhanced with chia seeds which give it an extra dose of healthy goodness our bodies crave when the weather is gloomy.

Salvia Hispancia (Chia) is an edible seed from the mint family that flourishes in Southern Mexico.  Tiny, but powerful this seed is rich in omega-3 fatty acids, antioxidants and fiber as well as calcium, magnesium and zinc.

Chia has a nutlike flavor, but when added to water and allowed to sit for 10-15 minutes they form a gel that aids in slowing down the process by which digestive enzymes break down carbohydrates and convert them into sugar.
