Hosting Thanksgiving can be both exciting and stressful. I can clearly remember burning the turkey the first year I hosted Thanksgiving. There was no saving it. I broke into tears my perfect day was ruined.
My mami and sisters joined me in the kitchen to ensure me Thanksgiving was not ruined. I cried, they made me laugh and all was well. We proceeded to feast on sides and sandwiches. It was a great day.
After that day I decide not to put added pressure on myself – it takes all the fun out of the day. I set my menu, create a solid grocery list and am always open to new tasty ways to relieve the stress.

And what’s Thanksgiving without mashed potatoes? Creamy, dreamy, buttery – the side dish you make a double batch for the kiddos, but know darn well that you made extra for yourself.
Today I want to share with you a simple Thanksgiving mashed potatoes made extra dreamier by adding plenty of smoky chipotles.
Potatoes are cooked until tender, then mashed with butter, milk, and chipotles until fluffy. Seasoned with salt and pepper my chipotle mashed potatoes are the ultimate side dish for your Thanksgiving.
Chipotle Mashed Potatoes
Yield 8 Serves
Ingredients
5 pounds russet potatoes, washed, peeled and cut into 2-inch chunks
1/4 cup butter
1 cup milk, warmed
2 chipotle chiles, canned, finely minced
Salt
Pepper
Instructions
Bring 3 quarts water to a boil. Add potatoes and cook until tender when pierced with a knife, about 15-20 minutes. Drain and return to pan.
Add butter, milk and mash with a potato masher, until smooth. Stir in chipotles, season with salt and pepper. If potatoes are stiff, add additional milk. Serve warm.
