Creamy Pumpkin Pasta with Chorizo
This holiday pasta dish is a tasty rendition of the mac and cheese my children enjoyed when they were younger. They loved mac and cheese, but as they got older they transitioned from craving mac and cheese to requesting creamy pasta dishes. In celebration of pumpkin season I made this pasta dish for them a few years ago, it was a hit. A savory pumpkin sauce made with pumpkin, chorizo, onions and crema. Seasoned with cumin and oregano and topped with Cacique queso cotija this pasta dish is a great dish for fall. Hearty, rich and delicious it soon became one of my children’s favorite pasta dishes.
