I was recently asked to visit plus share an easy snack at my niece’s school. I wanted to create something that was tasty, crunchy and packed with flavors kids would love. I also wanted it to be easy for parents-teachers to whip up in advance with the ability to create a large batch for goodies bags or for a party.
Enter cereal snack mix. I reached out to my friends over at general mills and they graciously sent me a dozen boxes to create this fun cereal snack mix, plus a fun gift bag to award the teacher of the class with the most box tops collected.
I grew up snacking on cereal snack mix they were all the rage in the late 70’s. My mom would set out large bowls of cereal mix warm from the oven so guest could nibble on before she served dinner.
Let’s get snacking: First I added popcorn – because all kids love popcorn.
Next I added Kix cereal,
After Kix cereal I added Rice Chex cereal, these are my favorite, so I also added an extra cup.
Pepitas for crunch,
And finally slices of freeze dried apples.
I mixed up the cereal mix, scooped the mix into small glasses while the kids chatted about what their favorite dried fruits were. It was a HIT! The kiddos loved the cereal mix. Thank you General Mills!
