My honey margaritas with bee pollen rim are a love letter for my love to Texas honey. I pick up local Texas honey on my travels visiting farmers markets and from local pop-ups.
Texas ranks fourth among the states in honey production. Honey produced in Texas has many antioxidant and antibacterial benefits. With its warmer temperatures Texas honeybees have a long, warm growing season that allows them to forage and pollinate many kinds of plants.
This results in honey blends that have many different pollens and flavors inside, with rich wildflower floral notes.
WHAT DOES TEXAS HONEY TASTE LIKE?
Texas honey has a mild, floral flavor profile. Texas honey is famous for its excellent quality and pleasing aroma.
Today I want to share a margarita made with honey syrup made from Texas honey. Honey syrup is a take on the simple syrup which is made with sugar and water.
Honey syrup is made with honey and water.
Honey syrup can be used to make cocktails, sweeten tea, in vinaigrettes, marinades, stir fry, sauces or drizzled over warm muffins.
Keep in mind that different varieties of Texas honey have different strengths and flavor profiles, use the honey you enjoy.
HOW TO MAKE HONEY SYRUP?
Honey syrup is made by combining honey with warm water. I generally do 2 parts honey to 1 part water.
To make honey syrup you will need:
1 cup Texas honey
1/2 water
Add the honey and water into a small saucepan over medium heat.
Stir until the honey is dissolved.
Allow it to cool and transfer to an airtight container. The syrup will keep refrigerated for up to 1 month.
Recipe can be doubled.
HOW TO MAKE BEE POLLEN SALT RIM FOR MARGARITAS
I rimmed my glasses with a mixture of bee pollen and coarse salt, for texture and a hint of honey sweetness.
I pick up my bee pollen and the farmerโs marker, but you can find it at your local grocery store near the honey.
I use a mortar and pestle to finely ground my bee pollen, but you can also use a coffee grinder or a rolling pin.
I featured a bee pollen rim for my apple margaritas served in a Cazuela.
- For margarita:
- 1 cup tequila
- 1 cup lemon juice
- 1/2 cup Cointreau
- 1/4 cup honey syrup
- 6 cups ice
- For rim:
- 1 tablespoon bee pollen
- 1 tablespoon coarse kosher salt
- lime wedges for rimming glass and garnishing

For rim: finely grind bee pollen and salt. Run a lemon wedge around glass. Dip glass in bee pollen, salt mix.

For margaritas: To a blender add tequila, lemon juice, Cointreau, honey syrup ice. Blend until slushy.

Taste and add additional honey syrup is desired.

Pour into prepared glasses and serve immediately.
