Kiwi Margarita

Mother’s Day is all about mom and celebrating her in every way possible. This Mother’s Day, celebrate the occasion with a stunning margarita that is just as sweet as mom.

 

My mami loves kiwi’s – over her breakfast oatmeal,  whizzed into an agua fresca or eaten icy cold with a spoon. She requests them whenever I call to ask what she needs from the grocery store.

I’ve kept this margarita recipe super simple since I don’t want anything to overpower that delicious kiwi flavor. A touch of sugar, plenty of fresh lime juice, a few pulses in the food processor and you are ready to add to a pitcher. Feel free to strain before adding to the pitcher, but I personally love ALL the seeds. Yum. 

I’m whipping up these margaritas in a pitcher for ease, plus they can go from fridge to table, after all on Mother’s Day there should be absolutely no heavy-lifting.

This vibrant, fruity and delicious margarita is the perfect treat to accompany brunch festivities, or any flowers or chocolates you plan to gift mom on her special day.

Kiwi Margarita

Yield 4 Makes

Ingredients

4 kiwis, peeled and coarsely chopped

2 teaspoon sugar

juice of 1/2 lime

4 ounces tequila blanco

2 ounces Cointreau

ice

Instructions

In a food processor pulse kiwis, sugar, and fresh lime juice. Taste, add additional sugar or lime juice if desired depending on the sweetness of your kiwis. Add blended kiwi to a pitcher, stir in tequila and Cointreau. Serve over ice in a salt-rimmed glass.
