Olive Garden Salad with Spicy Olive Garden Dressing Inspired by Selena

Olive Garden Salad with Spicy Olive Garden Dressing inspired by Selena is a spicer version of the original Olive Garden Salad Selena loved so much. Made of iceberg garden salad, red onion, pitted black olives, pepperoncini peppers and roma tomatoes.

 

Word on the street is Selena loved visiting the local Olive Garden. Did she order pasta?? The breadsticks? Nope, Selena ordered the Garden Salad. I can understand the fascination. The Olive Garden Salad has become one of the most searched for recipe on the internet. Simply search copycat Olive Garden salad, and thousands of recipes appear.

Selena, she was on to something.

Today I wanted to pay homage to Selena’s favorite salad by sharing the Olive Garden inspired salad we enjoyed at our Raised on Selena dinner. I kept the salad true to the original but did kick it up a notch by serving it with a spicy version of the Olive Garden salad dressing. Once again a Tex-Mex spin because after all, Selena is our Tejana queen.

This Selena inspired Olive Garden salad is brimming with juicy tomatoes, salty olives, spicy pepperoncini peppers, crisp red onion, crunchy croutons all tossed with romaine lettuce and topped with that spicy version of the Olive Garden Italian Dressing.

Olive Garden Salad with Spicy Olive Garden Dressing

Yield 4-6 Serves

This Selena inspired Olive garden salad is brimming with juicy tomatoes, olives, pepperoncini peppers, crisp red onion, crunchy croutons and are tossed with romaine lettuce and topped with Spicy Olive Garden Dressing. 

Ingredients

For Salad: 

1 (12 ounce) bag iceberg garden salad

1 small red onion, thinly sliced

1 cup pitted black olives

6 pepperoncini peppers, thinly sliced

1 -2 small roma tomato, thinly sliced

croutons

For Dressing:

1/2 cup mayonnaise

1/3 cup white vinegar

1 teaspoon vegetable oil

2 tablespoons light corn syrup

2 tablespoons grated Parmesan cheese

2 tablespoons grated Romano cheese

1 garlic clove, minced

1 teaspoon dried chile ancho

1/2 teaspoon pepper

1 tablespoon lemon juice

1 teaspoon sugar

Instructions

For Olive Garden Salad:

In a serving bowl, toss together all ingredients. Serve with salad dressing and croutons.

For Spicy Olive Garden Dressing:

Combine all the ingredients in a blender. Blend until smooth. Serve with salad.
