Quesadilla Dulce con Fresas y Queso

It’s that time of the year, when love is in the air.  Ahh, the sweet sweet month of February.  I look forward to February.  I believe this is the month where we take those little extra steps to really shower on the as my girls’ say “sticky love.”   Sticky love is in your face, up in your grill, invading your comfort zone, embarrassing kind of affection. There is a reason for this “sticky love”.  Let’s pause for a moment to think back.

September begins the whirlwind of school.

November is all about the turkey.

December we celebrate everything Christmas.

January comes with the hope of New Year

February finally swoops in allowing us the opportunity to cherish the people we love, to really slow down a bit to enjoy them, spoil them and renew the spirit of love. “sticky love”

We begin celebrating the First of February and continue until the last day.  Of course not every moment is over the top, but we strive to add that little extra splash of joy.  If you were with me last year you will remember “hearts” yes I featured hearts everywhere.  To continue this small tradition I give you  quesadillas de amor.  Lightly baked tortillas (corn or flour) filled with dulce de leche, cheese and strawberries.  Enjoy! I send you “sticky love” throughout this sweet month. Sweet Life!

I used small fondant cutters to make my quesadillas, use cooked tortillas for quicker baking time.

If you prefer a savory quesadilla why not cut little hearts out of bell peppers?

For that extra special touch, make strawberry flour tortillas or blueberry juice. Recipe follows.

Strawberry Tortillas

A sweet lunch for your kiddos!

Quesadillas dulce con fresas y queso

makes 2 flour or 2 corn

2 flour tortillas, cooked

4 corn tortillas

2 tablespoons of dulce de leche

strawberries

1/2 cup queso, your choice any melting cheese will do. I used queso quesadilla

baking spray

heart cutters

Place your tortillas on a cutting board using your heart cutter design your tortilla.

For the flour, you will be  folding over tortilla, so only cut on the side you will fold over.

For the corn, only cut on top layer of quesadill, as these are stacked.

Using the same heart cutter, cut strawberry hearts and insert into tortillas heart shaped cuts.

Spread dulce de leche, divide cheese and top with the tortilla layer that has the starwberry cut out.

Spray lightly with baking spray and place on cookie sheet.

Bake in warm oven until cheese melts, about 5 minutes.

    What a beautiful bit of Valentine love I woke up to this morning (I have some for you, too, on my site!)
    Cutting strawberry slices with the little fondant cutter is brilliant. SO SO SO cute. I just love playing with my food like that.
    I have really enjoyed reading you for the greater portion of this past year. Love your new look and am looking forward to many more little heart felt moments like this.

    Hey Bonnie! Your place looks great, Mamita! I really like the new look-it’s very clean and inviting.
    Oh, and I know this must be good, b/c you’ve been very into the cheese and dulce de leche thing lately. Plus, it just sounds really good. And I bet the strawberries really top it all off with some tart, yet sweet freshness. I love that about fresh berries…
