Turkey Picadillo Empanadas

My hubby loves breakfast sausage with his stack of Saturday morning pancakes.  He also loves breakfast sausage with his eggs, on his tostadas, over his chilaquiles and on his pizza.  He can’t get enough of it.

So when I was asked to create a new recipe using Jimmy Dean fully cooked sausage crumbles I knew I just had to create something that hubby would love.  I didn’t want to go the breakfast route, so I thought why not make something we could both enjoy for lunch.

I also wanted the recipe to be easy to whip up with only a few ingredients.  A jar of olives, onions and garlic and pre-made pie crusts and presto, lunch was served.   Plump empanadas bursting with turkey picadillo made with Jimmy Dean fully cooked breakfast sausage.

He loved them. I loved them. They were a hit.

Turkey Picadillo Empanadas

Ingredients
  • 2 tablespoons olive oil
  • ½ cup diced onion
  • 1 garlic clove finely minced
  • 2 medium potatoes peeled and diced
  • 1 pkg 9.6 ounces Jimmy Dean fully cooked turkey sausage crumbles
  • 1 teaspoon ground cumin
  • ¼ cup green olives drained and chopped
  • Salt
  • Pepper
  • 1 15 ounce package refrigerated pie crusts, softened as directed on package instructions
Instructions
  1. Pre-heat oven to 350 degrees.
  2. Lightly grease a baking sheet; set aside.
  3. In a non-stick skillet heat oil over medium high heat. Stir in onions and potatoes and sauté 5 minutes.
  4. Add garlic and cook additional minute. Reduce heat add sausage crumbles, cumin and ½ cup water. Cover with lid and simmer until potatoes are tender and sausage has heated through, about 5 minutes.
  5. Remove from heat stir in olives and season to taste with salt and pepper.
  6. On a lightly floured surface unroll piecrusts and roll into a 15 inch circle. Using a 4 inch round cookie cutter cut out rounds, about 8-10.
  7. Spoon 1 tablespoon filling into each circle, fold over and crimp edges with fork. Place on baking sheet and bake 10-15 until golden brown.

 

Mi marido ama salchichas de desayuno con su montón de panqueques en Sábado por la mañana. También le encanta el desayuno de salchichas con sus huevos, en sus tostadas, sobre sus chilaquiles y en su pizza. Él no puede tener suficiente.

Así que cuando me pidieron a crear una nueva receta con Jimmy Dean salchichas completamente cocidas desmorona sabía que tenía que crear algo que mi marido le encantaría. No quería ir a la ruta del desayuno, así que pensé por qué no hacer algo que pudiéramos disfrutar para el almuerzo.

También quería la receta sea fácil de improvisar con sólo unos pocos ingredientes. Un poco de aceitunas, cebolla, ajo y masa de pasteles pre-hechas y listo, se servirá el almuerzo. Empanadas llenas de picadillo de pavo hecho con Jimmy Dean totalmente salchichas precocinadas.
