Do you ever host a party, “just because?” In the rush of life, kids and a busy work schedule it seems like I don’t get to have my girlfriends over as nearly as often as I would like.
With summer in full swing, I thought it would be the perfect opportunity to gather a few of my closest girlfriends to have a “just because of celebration.” A celebration of friendship is exactly what I needed. A few hours to reconnect with my friends and enjoy some girl time.
Last week, I hosted a few girlfriends for a laid back, no-fuss party. What I love about hosting my girlfriend is you don’t have to cook anything fancy or prepare an entire meal. Girlfriends simple want to mingle, nibble and chat.
I kept my menu simple, delicious, yet hassle free by whipping up three easy appetizers that I could make in advance. I made a refreshing honeydew salsa that I served with tortilla chips. Mini picadillo tostadas drizzled with cream and topped with queso fresco are always a hit with my girlfriends. I also served guava grilled shrimp; shrimp is a fantastic entertaining option since they cook quickly. I set everything on serving trays, along with small plates and utensils and let guests snack as they please throughout the evening.

I prepared the cocktail tableside so that my girlfriends could see the beauty of this cocktail. A refreshing watermelon mezcal punch made with Tropicana Watermelon Premium Drinks, mezcal, lime juice and fresh mint is the ultimate summer sipper when entertaining girlfriends.
Ingredients
1 Tropicana Premium Drink Watermelon
9 ounces Mezcal
4 ounces lime juice
1-quart sparkling water, chilled
Fresh watermelon slices
Fresh lime slices
Fresh mint
Instructions
To a punch bowl combine Tropicana Premium Drin Watermelon, Mezcal, and lime juice. When ready to serve top with chilled sparkling water. Garnish with watermelon slices, lime slices, and fresh mint. Serve over ice.
