Texas Pecan French Toast

The second recipe featured on Chow and Chatter by Sweet Life. I thank everyone for stopping by Rebecca’s blog and leaving lovely comments.

  

Need something sweet to start your day off in the right track? Well let’s add together two of my favorite Texas flavors and see what we come up with. Take our famous Texas Toast dunk it into a savory egg mix, cook until golden brown and then pour over a sweet mix of Texas pecans with brown sugar giving you a little extra motivation to jump out of bed. Enjoy!!

Texas Pecan French Toast
By Sweet Life
Serves two
4 slices of Texas Toast
3 eggs, beaten
Salt
pepper
½ cup butter
½ cup brown
1 tsp vanilla
1 cup chopped Texas pecans
Extra halves for garnishing
Heat oven to 200 degrees.

In a large bowl combine eggs, salt and pepper.
Heat a large non stick pan or griddle to medium high heat and add vegetable oil or butter.
Dunk each piece of Texas toast allowing
each piece to soak in the egg mix.Add slice to griddle as many as fit, do not overcrowd.
Cook until golden brown on both sides.
Remove and place in oven to keep warm until sauce is ready.
Melt butter, brown sugar in saucepan over low heat.
Add vanilla and stir to combine.
Add pecans
Drizzle mix over toast and garnish with pecans halves.
If mix becomes too thick add a little bit of water, it will help to loosen mix.?

    french toast is sometimes off-putting to me because it’s just so limp and soggy, but the crunchy nuts will take care of that real quick–gorgeous work!

Pomegranate Martini 
By: Vianney Rodriguez 
2 ounces @titosvodka 
3 ounces pomegranate juice
1 tsp piloncillo 
fresh lime juice

To a cocktail shaker filled with ice add your ingredients. Cover, then shake baby shake.

Serve & garnish with lime slice.

These babies can be made in a snap by using store-bought corn tortillas and plenty of delicious #tillamookcheese 
Add shredded roasted chicken, refried beans, salsa, sliced onions, diced tomatoes, cilantro and plenty of Tillamook Farmstyle Cut Shredded Mexican 4 Cheese. Once assembled they go back into the oven until all that glorious cheese melts.

  • Today I honor my abuelito for Dia de Los Muertos, Day of the Dead with a #marigold infused tequila I know he would have enjoyed after a long day. Dia de los Muertos is a cheerful, joyful celebration where we take time to remember our dead, honor them and celebrate their lives.

Infused with dried marigolds, #cempasuchil is the traditional flower used to celebrate #DiadeLosMuertos  An important Day of the Dead symbol these flowers symbolize death, referred to as the flower of the dead they are placed on the altar, the grave and their petals are sprinkled on the floor to lead the dead to their grave. It is believed that marigolds guide the spirit of the dead to their altars using their vibrant color and fragrance.

This infusion takes seven days, but after the second day the tequila takes on a beautifully golden color. I added a cinnamon sticks to the infusion to add a depth of warmth and sweetness. You can purchase organic dried marigolds online or local nursery.

Today I’m adding my own personal twist to revamp this beloved classic a delicious casserole that is perfect for pot-lucks, entertaining and weeknight meals. 
Juicy corn, tender zucchini are combined with fresh lime juice, @knorr bouillon, sour cream and @hellmannsmayonnaise , baked until bubbly and topped with fresh cilantro, cotija cheese and ancho chile powder. 
The addition of zucchini to this dish gives the casserole a burst of fall goodness and pairs perfectly with the juicy corn kernels. No need to fire up the grill for this recipe, frozen or canned corn work beautifully in this dish.
