Honeydew Cucumber Cooler
A simply sweet cocktail to kick off the Mother’s Day weekend, oh yeah baby Mom’s are pampered the entire weekend in our home. Mami, my sisters and I are planning on enjoying a festive brunch, an outdoor BBQ feasts and an evening of appetizers and cocktails.
And this beauty will be the first on the list. Sweet from ripe honeydew, crisp and refreshing from cucumbers, a splash a fresh lime juice for a hint of Summer days to come and Moscato, which we all know makes a day special.
I have been enamored with Moscato ever since a visit to see my little brother became a week of sipping on new Moscatos he would pick up on his way home from work. These days I can’t imagine not serving a cocktail that’s not made with moscato.
This cocktail-cooler reminds me of agua fresca with a fresh perk from cucumber. Next time you make agua fresco try adding a few cucumbers to the mix, it adds a wonderful hint of freshness.
- I bottle chilled Moscato
- ½ of a medium ripe honeydew melon, diced
- 2 medium cucumbers peeled and seeds removed
- Juice of 1 lime
-
To a blender add melon and cucumbers; puree until smooth. Strain juice, without pressing on the solids, to extract clear green juice. Refrigerate juice until ready to serve. When ready to serve add honeydew-cucumber juice, lime juice and moscato to a large pitcher. Stir to combine and serve over ice, garnished with cucumber, honeydew and lime slices.
