Happy National Hummus Day!
I love hummus and am always trying to find new ways to incorporate it into my meals. From tostadas, to cake to tacos hummus is a serious power food that is delicious. When Sabra hummus asked me to help celebrate National Hummus day by sharing how I enjoy eating hummus I instantly thought of my favorite lunch tacos made with plenty of hummus and fresh veggies.
I make my hummus tacos by charring a few corn tortillas. A hefty layer of hummus, then I go crazy on the toppings. I add fresh spinach, diced red bell epper, thinly sliced red cabbage, corn and cucumbers. A drizzle of hot suace and lunch is served. Top your tacos with whatever your little heart desires, roasted chicken, olives, avocado or roasted peppers. Hummus tastes great with any flavor combination.

- 3 corn tortillas
- Sabra Hummus flavor of your choice
- fresh spinach
- dice red bell pepper
- corn
- sliced cucumbers
- red cabbage thinly sliced
- hot sauce

Preheat your grill on medium high heat. Char tortillas until slightly crisp. Spread Sabra hummus on each tortilla and top with spinach, red bell pepper, corn, cucumbers, red cabbage and drizzle with hot sauce.
