Honey Margarita {The Bertha Cocktail}

My go-to cocktail will always be the margarita. I simply love how tequila is a wonderful blan canvas to create with and how easily it can meld with different flavors. An addition of fresh fruit juice or vegetable juice is all that is needed to create a delicious margarita every day of the week.

Today I want to share with you a creamy honey margarita inspired by the Bertha cocktail. Bar Bertha opened in the late thirties in Taxco, Mexico. Taxco is best known for its silver which I believe motivated Doña Bertha to create something exciting to serve her patrons.

A nod to the popularity of silver in Taxco she reached for silver tequila then proceeded to add a splash of honey for sweetness, fresh lime juice and an egg white for creaminess and the Bertha was born. She would later be given credited by Sara Morales an expert of Mexican folklore as one of the original creators of the margarita.

You may question the addition of an egg white in this margarita, but remember margaritas are classified under the sour family in cocktails which include gin fizzes and pisco sours which all include an egg white. When shaken with plenty of ice the egg white gives the margarita a super frothy, creamy layer which pairs perfectly with the honey and fresh lime juice.

I opted to skip the salt rim on this margarita and went with a half rim of crushed bee pollen to add not only texture but crunch to this margarita. I loved the results. Lightly brush the side of the cocktail glass with honey and rim with the bee pollen, stunning. This honey margarita would be a great ladies night cocktail. It’s feminine, sexy and makes an impression. I am truly in love with the flavor, the creaminess from the egg and the rim makes sipping this cocktail fun.

Begin with quality eggs, your favorite silver tequila and invest in amazing local honey. You can find bee pollen next to the jams and jellies. Finely crush the bee pollen using a mortar and pestle or coffee grinder. Use leftover bee pollen in smoothies, salads, over yogurt or toast or better yet keep it in your pantry to make this beautiful margarita.

Honey Margarita {The Bertha Cocktail}

Ingredients
  • 2 ounces silver tequila
  • 1 ounce honey plus 1 teaspoon for rim
  • 1 ounce fresh lime juice
  • 1 egg white
  • 1 tablespoon bee pollen
Instructions
  1. Finely crush bee pollen.
  2. Lightly brush side of cocktail glass with honey and roll in crushed bee pollen.
  3. In a cocktail shaker filled with ice add tequila, honey, lime juice and egg white.
  4. Shake vigorously for 1 minute. Strain into prepared cocktail glass.
