Spicy Grilled Hummus Tostadas
Growing up my mom would make fresh homemade tortillas at least once a day to serve with our meals.
She never made too many or too few, just enough for the meal. She had a knack for it and not once did I ever see her using a measuring cup.
On the rare days where there were a few tortillas left over she would grill them on a warm comal until they were slightly charred and crisp. A quick base of refried beans, a spoonful of salsa or fresh tomatoes and it was snack time.
I’m adding my own spin on a favorite childhood snack by using spinach tortillas, chipotle hummus and an overload of fresh veggies.
- 4 flour tortillas- I used spinach tortillas
- cooking spray
- 1 cup hummus – I used Sabra chipotle Hummus
- Toppings:
- Chopped cucumber
- Chopped tomatoes
- Diced onions
- Cilantro

Lightly spray tortillas with cooking spray and grill over medium heat; turning over every minute until lightly browned and crisp.

Remove tortillas from the grill and let them cool for a few minutes. Then top each crisp tortilla with hummus and toppings.
