Easy Enfrijoladas

I can always count on my beloved beans to wrap me in comfort on a hectic day. Frijoles de Olla are a staple in my weekly menu. With eggs for breakfast, smashed into a quesadilla or simply with a few avocado slices and a slice of queso beans are so versatile. Last week I spent endless hours editing, on the phone or emailing with my co-author Yvette putting the finishing touches on our cocktail manuscript before we submitted it for review to our publishers.

My weekly pot of frijoles was put on the back burner, bummer and all I craved was a steaming plate of enfrijoladas. Enfrijoladas are warm tortillas dipped into a creamy bean sauce, topped with a spicy salsa and a sprinkle of cheese. Total comfort food they are the ultimate for a quick pull together meal, perfect for a crowd with the added bonus of affordability.  With no freshly made frijoles de olla in my fridge I headed to my pantry for my back-up plan, canned refried beans.  A few slices of onions, a few cloves of garlic, chicken broth and I had a rich, creamy bean sauce to make my enfrijoladas – comfort craving met!

These enfrijoladas came together with the help from my friends over at Old El Paso. Serve them as an appetizer or lightly mount them on a plate for lunch or feed a crowd for dinner. Make these your own by switching to black beans or fill them with chicken, carne asada or top them Texas style with chile con carne.

Easy Enfrijoladas

Ingredients
  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 3 garlic cloves minced
  • 1 16 oz Old El Paso traditional refried beans
  • 2 cups chicken broth
  • 12 corn tortillas
  • 2 cups shredded cheese
  • Garnish Salsa Cilantro
Instructions
  1. Heat oil in skillet over medium heat. Add onion, sauté until soft and translucent, about 5 minutes. Add garlic and continue to sauté for additional minute. Reduce heat add beans, broth stirring to break up beans and form a sauce, simmer for 5 minutes. Warm the tortillas on the comal. Dip each tortilla in the bean mixture, fill with cheese and fold over on plate. Garnish with salsa and cilantro.
