This Fourth of July we are heading to the beach to celebrate in style. We plan to grill, chill and feast with family and friends. Of course we need a fabulous cocktail to sip the day away and with the temperature reaching high into the 90’s I cannot think of anything more refreshing than a mojito to keep us cool.
This vibrant red sparkling strawberry mojito is made with fresh strawberries, a splash of Captain Morgan’s Coconut rum and plenty of fresh mint, but since we are celebrating I thought why not add a bit of sparkle to our mojito with champagne, after all champagne and fireworks go hand in hand. Happy 4th!
- 1 lime cut into slices
- 8 fresh mint leaves plus more for garnish
- 2 tablespoons sugar
- 6 strawberriess sliced
- Ice cubes
- 4 ounces Captain Morgan’s Coconut Rum
- Chilled champagne

To two tall glasses add 2 lime slices, 4 fresh mint leaves, 1 tablespoon of sugar and half of sliced strawberries to each glass. Muddle until the sugar is dissolved. Fill the glass with ice and stir in the rum, 2 ounces to each glass and top with chilled champagne. Garnish with the mint sprig and extra strawberries.
