Grilled Pineapple Salsa

Grilling season is here! This summer I’m on a mission to mix it up on the grill. From grilled avocados, jalapenos and fruit my plan is to grill as many different ingredients as I can.

I have always grilled fruit to serve as dessert after dinner. Have you tried grilling fruit yet? Oh baby the heat crystallizes the fruit natural sugar to create a crunchy, almost bruleed texture that is amazing over ice cream or served warm over angel food cake.

My Grilled Pineapple Salsa is slightly sweet, spicy and addicting. Made with grilled pineapples, red onions, jalapenos, cilantro and plenty of lime juice this salsa makes the perfect appetizer and is a delicious topping to tacos, fish or a great mid-day snack the next day.

To grill pineapple: Lightly brush pineapple with olive oil and place on grill. Grill for 5-7 minutes on each side.

Ingredients
  • 1 cup grilled pineapple diced
  • ½ cup red onion diced
  • 1 jalapeno finely diced, seeds removed for less heat
  • 1/4 cup cilantro stems removed
  • Juice from 1 lime
  • Salt and pepper
Instructions
  1. In a bowl combine all ingredients, add lime juice; mix. Season with salt and pepper.
