Yโall the last day of summer is September 22. I plan to soak up every second of summer by serving up beautiful cocktails served in a Cazuela. My strawberry cucumber cazuela cocktail is bright, refreshing and made with tequila Blanco.
The beauty of serving cocktails in a cazuela is guests can serve themselves.
Imagine this: My strawberry cucumber cazuela cocktail at the center of the table, guacamole, chips and salsa and frosty glasses filled with ice. Sounds like a simply wonderful evening to me.
WHAT IS A CAZUELA?
Cazuelas are clay (barro) casserole dishes that are round like a bowl and often have handles that allow for easier handling when used for cooking. They can be found in all sizes, colors, and glazes.
Cazuelas are used to make mole, sauces, stews, salsas, and beans. I am drawn to their bright vibrant colors, and love incorporating them into my meals, when entreating, decorating my kitchen, or hosting events. I have been collecting for years. I have them in all sizes, for serving 4 to 100 guests and even have small individual cazuelas I use to serve margaritas.
Made in Mexico you can find them at Mexican Mercados, pulgas and online. Look for Cazuela that are marked lead free, safe for food use.
TIPS ON MAKING STRAWBERRY CUCUMBER COCKTAIL
For this recipe I used a blender if you have a juicer use it.
You can also use a food processor in batches.
Donโt skip on straining after blending. This helps remove nay chunks and helps to reduce froth.
You can prepare juices a day in advance. Store in the fridge, covered to avoid altering the taste.
This cocktail is perfect for strawberries and cucumbers that are on their last leg. Donโt let these babies go to waste throw them in your blender to enjoy this cocktail.
Fresh juice works best in this recipe, feel free to swap out limes for lemons or blueberries for strawberries.
MAS CAZUELA COCKTAILS:
Cantaloupe Cucumber Cazuela Margarita
- 6 cucumbers peeled, seeded, and quartered
- 1 1/2 cups water
- 2 cups strawberries stem removed and slices
- Juice from 1 lime
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 cup water
- 1/2 cup granulated sugar
- 1/4 cup lime juice
- 3 cups tequila Blanco
- cucumber and strawberries for garnish.

In batches to a blender add cucumbers and water. Blend until smooth, strain. Rinse blender.

To a blender add strawberries, lime juice, sugar, salt, and water. Blend until smooth, strain.

Add sugar and lime juice to Cazuela or a punch bowl, stir to dissolve sugar. Pour in fresh cumber juice, strawberry juice, stir to combine. Stir in tequila. garnish with cucumber slices and strawberries. Serve in cocktail glasses filled with ice.
