My Piccadilly Raspa (snow cone) recipe is a sweet and sour snow cone made with cherry syrup and pickle chunks topped with Tajin, chamoy gummy candies.
A Piccadilly is a deliciously sour treat to enjoy on a hot summer day in South Texas.
The name raspa comes from the Spanish term hielo raspado, or scraped ice.
I grew up on raspas โ Brownsville, Edinburg, Matamoros every chance I had I would ask Papi (my dad) buy me a raspa.
Raspas remain popular in Texas โ you can find little stands or trucks parked near grocery stores, laundromats and pulgas.
I recently found a new one to try in Robstown, Texas. Iโm so excited to try it!
A raspa stand can also sell snacks, which always makes me happy. Hot Cheetos with cheese, Frito pies, nachos, candy, chips, pickles or fruit cups.
A Piccadilly is made from cherry flavored syrup, or cherry Kool-aide, shaved ice and lotos of pickle juice and chopped pickles โ you can top it with Tajin, or chamoy and even gummy bears or gummy worms.
Last year I purchased a mini snow cone maker, life got busy and I never had the chance to break it out. A few weeks ago, I had the chance to make homemade raspas at home, and oh baby, they are so good!
We made mango raspa, strawberry raspas and our own version of a Piccadilly with fresh cherries. I’m excited to share my piccadilly raspa recipe.
Initially, one (me) might not think that a combination of cherries and pickles would be complementary; however, the result is delicious. The sweet-sour combo hits the spot on a hot summer day.
The piccadilly raspa typically features red and/or green chamoy (pickled, chili fruit sauce), sprinkled cherry Kool-Aid, and diced dill pickles atop shaved ice. This is my version, Enjoy!
INGREDIENTS NEEDED TO MAKE HOMEMADE CHERRY RASPA SYRUP
I made homemade cherry syrup for my piccadilly. hereโs what you will need.
2 cups fresh cherries, stems removed and pitted
1/2 water
1 cup sugar
Combine pitted cherries, water and sugar in a saucepan.
Bring to a boil.
Reduce heat to simmer and mash the cherries to break them up.
Remove from heat, allow to cool.
In a food processor or blender blend until smooth.
HOW TO MAKE A HOMEMADE PICCADILLY RASPA AT HOME
To a snow cone cup or Styrofoam cup layer shaved ice, cherry syrup and top with diced pickles.
Drizzle a bit of the pickle juice over the snow cone, and Tajin or gummy candies, optional.

- 2 cups fresh cherries pitted
- 1/2 water
- 1 cup sugar

For Piccadilly:
To a snow cone cup or Styrofoam cup โ layer shaved ice, cherry syrup and top with diced pickles.

Drizzle a bit of the pickle juice over the snow cone, and Tajin or gummy candies, optional.
