Berry-Mint Margarita Paletas

Happy National Tequila Day! I’m super excited to share a refreshing treat to help you celebrate this fun day featuring Dole frozen fruit. These berry-mint margarita paletas are sure to help beat the summer heat and with the help of dole frozen fruit are easy to make. I love paletas. My kids, my husband and parents can’t get enough of them, so I make sure to keep my freezer full of fresh fruit paletas. Plus paletas are a tasty way to keep you cool on a sweltering hot South Texas day.

I love to experiment with different fruit combinations and add in fresh herbs or chile for the adults. The kids enjoy melon paletas with sliced grapes or watermelon with a sprinkle of salt.  But today I want to share a cool treat, just for us adults. A boozy paleta using dole frozen fruit and spiked with tequila and fresh mint.

It was hard to decide what flavor paleta to make since dole frozen fruits are available in a wide variety of flavors: Wildly Nutritious Tropical Fruit, Wildly Nutritious Mixed Berries, Wildly Nutritious Mixed Fruit, Whole Strawberries, Wild Blueberries, Sliced Strawberries, Raspberries, Sliced Peaches, Mango, Pineapple Chunks, Dark Sweet Cherries, Dark Sweet Cherries, Blueberries and Blackberries.  I finally decided to go with the strawberry and blueberries mix since I wanted a hue of dark blue and I was right, that color really pops for presentation. I love the results!

Dole Frozen Fruit is harvested at the peak of ripeness to ensure consumers always receive the finest quality fruit all year around. I picked up several packages and plan to add them to my morning smoothies, make into paletas, enjoy them at snack time and use them for Friday cocktails, fun!

Berry-Mint Margarita Paletas

Ingredients
  • 1 bag Dole frozen fruit Strawberry and Blueberries mix slightly thawed
  • 4 ounces cointreau
  • 4-6 fresh mint leaves
  • 1 teaspoon salt
  • 1 cup tequila
Instructions
  1. In a blender, blend dole frozen fruit, cointreau, fresh mint leaves, salt and tequila until well blended. Fill the ice pop molds with the mixture, top with lid and insert wooden Popsicle sticks. Freeze for 6- 8 hours or until frozen before serving. Run paletas mold until warm water
