Blackberry Buttermilk Pancakes

Seizing the opportunity that everyone was home together my little sis decided to throw her girls’ birthday party during our time together.  What I thought was a brilliant idea is she planned a breakfast birthday party.  A stress free event  counting the  9 kids at the house, this worked perfectly.  No getting dressed, pajamas were a must, no rushing out the door, no public place filled with strangers and for sleepy eyed adults a steady stream from fresh pots of strong brewed coffee were on-hand.  The menu was kid- friendly “pancakes” fruit filled pancakes topped with even more fruit and warm syrup.  For the adults steamy tacos filled with home-made barbacoa and spiked with fiery salsas.  Everyone sat around the table eating, talking, laughing, being loud…we like loud and simply enjoying each other’s company.  At first we thought we would have trouble waking up the kids, but with the wonderful smell of pancakes  filling my mom’s tiny kitchen, soon all kids were circling the table.  I have to admit, I believe the adults enjoyed the party even more than the kiddos.  All of us sitting at the table together with mom and dad gave us a moment to relive our childhood and if that doesn’t make the pancakes taste even sweeter, the syrupy thank you kisses that followed from newly opened birthday presents really topped it off.  I leave you with a sweet blackberry buttermilk pancake recipe to enjoy on your weekend.  May you have a wonderful weekend and take time to enjoy pancakes…..  Love Sweet Life!

Feel free to add the fruit of your choice, if using frozen let the fruit thaw and strain the liquid you don’t want overly soggy pancakes.  Enjoy.

Blackberry Buttermilk Pancakes

makes 8 heafty pancakes

1 cup all- purpose flour

1/2 tsp salt

1 tsp baking soda

1 egg, lightly beaten (large)

1 cup buttermilk, please shake your buttermilk before adding

fresh blackberries, 1 pint

2 tbsp of sugar , taste your blackberries and add as needed, mine were sweet so I did not add sugar..optional

oil for griddle

preheat oven to 200 and place a baking sheet, place freshly made pancakes on baking sheet to keep warm until ready to serve.

Whisk together flour, salt, baking soda, egg, buttermilk and sugar is using until smooth.

Heat a cast iron griddle or non stick. brush with oil.  Using a ladle spoon pancake batter on griddle to your preferred size.

Scatter blackberries on batter.

Cook for about 2 minutes , you will see little air bubbles forming on pancakes and the batter will puff around berry.

Flip and cook for another 2 minutes, place on baking sheet in oven to keep warm. 

Serve with extra berries on top with syrup of your choice.

    Ah, one of the best ways to serve up berries on the morning, by far! Your pancakes look so perfectly light and fluffy, I wouldn’t be able to resist piling up a serious stack of them, any time of day. Maybe I should have pancake breakfasts more often…

    Wow, if the picture of those incredible pancakes was not enough to knock my socks off, I don’t know what is. I love the sound of that birthday party – time with family and friends is what makes life worth living and to celebrate an event and each others company – it just does not get much better than that!

    Blackberry pancakes sound almost decadent….wow….I love blueberry, but now do have to try them with blackberries, perhaps some whipped cream would be in order too!

    Oh Bonnie! These look fluffy and lovely. I wish I would wake up one day and have these already made for me (smile) with a big cup of coffee-that would be nice…
    Glad the grown ups had fun at the party too. We need that sometimes, you know;)?
    p.s. My mom just bought a case of organic blackberries. So I’m probably going to try this recipe with my whole grain flours in the morning! I adjust for wheatiness, so I don’t mess things up.

    That does sound like stress free birthday party. And great idea to do breakfast party. Why did I not think of it last week. Even though i had adults for party, this would have been better. But I can’t wait to make my pancakes. Yummy.
