Mexican Wafer Cookie Bark

My Mexican Wafer Cookie Bark is the ultimate Mother’s Day gift. Make this Mexican Wafer Cookie Bark in under 5 minutes and it only requires 3 ingredients. It’s the perfect edible gift for the mami. Crunchy wafer cookies filled with delicious cream come in various colors. Sweet, crunchy and addicting my abuelita always had these sweet babies on-hand when we visited her in Brownsville, Texas. My favorite are the chocolate ones, but my mami loves the pink ones. Once when enjoying them with her afternoon coffee she told me they were the shade of amor.  This little sentiment always stuck… Read More

Strawberry Pecan Margarita

Happy Cinco de Mayo Y’all! I’m giving my Cinco de Mayo a delicious Texas twist y’all –   Hands down one of the reasons I LOVE living in Texas is the amazing flavors our farmers bless us with each season. From strawberries from Poteet, Ruby Red from the Rio Grande Valley and don’t even get me started on the pecans, they are the BEST! When Tequila Cazadores reached out to ask me to be a Los Altos Amigos Ambassador to share the amor of tequila. Y’all know my adoration for tequila y margaritas? After all, I have an entire page… Read More

Concha Cake with Whipped Cream and Macerated Strawberries

  The perfect addition to your Mother’s Day celebration, the concha cake! A giant pink concha sliced in half then filled with creamy whipped cream, macerated strawberries. Easy to make and oh so delicious! I’m taking the concha to the next level just in time for you to SPOIL your mami. I plan to spoil all the mamis in my life this year con mucho amor. Remember the concha ice cream sandwiches I made last year; they were such a hit I knew I wanted to create something else featuring the beloved concha. When I spotted these Cake size conchas… Read More

Amor Prohibido Cocktail {Inspired by Selena}

Amor Prohibido Cocktail {Inspired by Selena} Inspired by one of Selena’s most memorable songs the Amor Prohibido cocktail was our final cocktail served at my Raised on Selena event.  Fresh strawberry juice, tequila, topped with champagne, this cocktail also pays homage to Selena’s vibrant red lip color in her Amor Prohibido video. Amor Prohibido became the first Tejano record to peak at number one on the Billboard Top Latin Albums chart, cementing fans love of Selena. A nod to somos de distintas sociedades I created this Amor Prohibido Cocktail {Inspired by Selena}. Tequila-Champagne cocktail in a vibrant red color to… Read More

Bidi Bidi Bom Bom Chocolate Cake {Inspired by Selena}

Treat your family or guests with an easy one-bowl chocolate cake inspired by the Tejana legend Selena Quintanilla. A delicious fudgy chocolate sheet cake that is so easy to make with a creamy chocolate frosting that I served at my Raised on Selena event. Selena’s song “Bidi Bidi Bom Bom” is always on repeat here at mi casita. Released as part of her album Amor Prohibido on July 31, 1994, this song is iconic. But did you ever stop to wonder what the lyrics of the song mean? In an interview with Don Francisco on Sábado Gigante in 1994, the… Read More

El Chico del Apartamento 512 Margarita – {Inspired by Selena}

Inspired by one of Selena’s most memorable songs El Chico del Apartamento 512, a fresh cantaloupe margarita was served at my Raised on Selena which celebrates the late Tejano’s life, legacy and impact on Latinos. The 512 is a loving nod from Selena to Corpus Christi, Texas’s former area code. Guys! Here is cocktail numero dos from Raised on Selena – El Chico del Apartamento 512 inspired by one of Selena’s most recognizable songs. Finally having the courage to profess her love the protagonist knocks on her love interest door (who lives in APT 512) only to find his girlfriend… Read More

Guys! Last night we celebrating Raised on Selena …. and it was simply magical. I’ll be sharing a complete write up of the evening soon, but today I wanted to share one of the Selena inspired cocktails of the evening – The Como la Flor Margarita. This creamy dreamy margarita is brimming with coconut, tequila and a hint of pineapple juice which compliments the coconut salt rim. It is a show stopper. My guests were served this icy cold margarita with Pizza inspired by Selena. You can find my Tex-Mex pizza here.   A Selena inspired margarita the Como la… Read More

Breakfast Huaraches

I’m serving hearty breakfast huaraches for a festive Easter brunch. Topped with refried beans, scrambled eggs, queso fresco and salsa huaraches are the ultimate brunch treat. Disclosure: Post sponsored by Mirum but all opinions are my own.   Huaraches are flattened ovals of masa shaped to resemble the sole of a Huarache (Mexican sandal). Like sopes, huaraches can be made/served small as an appetizer of made large enough to resemble a pizza. Cooked on a comal they can be topped with anything your heart desires. Shredded chicken, picadillo, beans, cheese or sautéed mushroom and salsa. I’m excited to partner with Knorr®… Read More
