Cantaloupe Basil Queso Fresco Salsa appetizer

 

We are safely moving back to summer entertaining, and I plan to soak in every get-together, every brunch, and every happy hour this summer. Bring on the Cantaloupe Basil Queso Fresco Salsa and cold beers.

 

Salsa lovers my Cantaloupe Basil Queso Fresco Salsa is a quick and easy recipe you can whip up in no time. Juicy cantaloupe is combined with red onion, fresh basil, sliced jalapenos, queso fresco and plenty of fresh lime juice. Served with a piping pile of homemade tortilla chips – yum!

 

This salsa goes perfectly with fresh tortilla chips, on tacos or spooned over fish or grilled chicken. Fresh salsas in the summer are my go-to when entertaining, grilled pineapple salsa and grapefruit salsa are always a crowd pleaser.

TIPS ON MAKING CANTALOUPE BASIL QUESO FRESCO SALSA

 

A firmer melon works best in this recipe. How to choose a Ripe Melon.

Finely dice you red onion for a lighter bite.

Feel free to remove the seeds from the jalapeno for a less heat.

Rinse, pat dry then chop or chiffonade basil.

I slice and lay my ingredients on paper towels to reduce moisture, before adding to bowl, por que a watery salsa is no bueno.

Add the crumbled queso fresco when ready to serve. The fresh lime breaks down the queso, so add before serving.

Toss together all ingredients in a bowl, except for queso fresco, cover and chill until ready to serve.

 

EASY INGREDIENT SUBSTITUTIONS 

 

Cantaloupe – cantaloupe works beautifully works in this salsa, but feel free to use honeydew.

Basil – cilantro can be substituted in this salsa.

Jalapeno – I have made this salsa with serrano chile in place of jalapeno, delish!

Red Onion – easily swap out white or yellow onions for this recipe.

Queso Fresco – cotija is a great substitution, as state din the recipe add before serving.

Ingredients
  • 2 cups diced cantaloupe
  • 1/2 cup finely diced red onion
  • 1 jalapeno finely diced
  • 1/4 cup basil chopped
  • 3 tablespoons lime juice
  • 1 teaspoon pepper
  • 1 teaspoon kosher salt
  • ½ cup queso fresco crumbled
Instructions
  1. Mix all ingredients except queso fresco together in a bowl. Place in fridge to chill until ready to serve, top with crumbled queso fresco before serving.
