Chile con Queso
Fall is here, which means the start of NFL football season, Yay! We are major football fans – major. Game days are always fun, the thrill of the game as we root for our team, the excitement of a great play and the energy from the crowd. We enjoy gathering around the big screen with familia and friends to enjoy cheering on our favorite team and of course feasting on fabulous football food. I love entertaining so to me the more the merrier, bring on the fiesta, bring on the cheering and bring on the tasty eats!
Mi carino likes to prep on Saturday and grill early Sunday morning just in time for the game. I’m in charge of whipping up appetizers, side dishes, cocktails and prepping the table for our guests. Every week I try new recipes or adapt family favorites but I always, always make queso. queso is a must-have on football Sunday and with so many variations, toppings and mix-ins you can literally enjoy queso the entire NFL season. Win-win in my book.
Today to highlight Hispanic Heritage Month along with the NFL to share our #feeltheorgullo moments I want to share with you a queso brimming with green chiles, sausage, cheese all topped with pico de gallo that we as a familia enjoy. It’s finger-licking good.
I often begin this queso in a skillet and then transfer it to a crock pot, but today I’m making it in a cast iron skillet and baking it off in the oven. Warm from the oven I place the skillet in the middle of table for my hungry guest. Be sure to serve with plenty of tortilla chips. Swoon.

- For pico de gallo:
- 4 medium tomatoes
- 1 small onion diced
- ¼ cup cilantro chopped
- 2 jalapenos diced
- Juice from 1 lime
- Salt and pepper
- For queso:
- 1 pound breakfast sausage
- 1 10 ounce can green chiles
- 1 2 pound Velveeta cheese block, cubed

For pico de gallo: Combine all ingredients and season with salt and pepper. Place in fridge until ready to top queso.

For the queso: Preheat oven to 350 degrees. In a cast iron skillet over medium high heat brown the sausage, breaking it up with a wooden spoon until fully cooked; drain fat. Stir in the green chiles and top with cubed cheese. Place in oven and bake until cheese melts completely, about 10 minutes. Serve warm topped with pico de gallo and chips.
