Oreo Stuffed Chocolate Churro Muffins

Busy school days call for a special moment together after all the running is done. And there’s no better way to relax after a long day than with a delicious sweet treat!

With Hispanic Heritage Month kicking off soon, I can’t help but create something that reminds me of my childhood growing up in South Texas — churros. And it wouldn’t be Sweet Life if I didn’t put my own spin on this traditional favorite.

For Hispanic Heritage Month, Nabisco invited me to invent my own Latin-inspired spin on one of their Oreo churro recipe. That’s why I’m incorporating Oreos, a classic Nabisco favorite into this fun, kid-friendly treat!

An Incredible Oreo Merienda Snack

My mami often made us a special snack or treat that we would enjoy right after school. It served as an opportunity to visit together and relax after a long day at work or school. And it helped to keep our bellies from grumbling while we waited for mami to start dinner.

To many, this special snack time is known as a “merienda.” A merienda is a light meal or snack that usually takes place between lunch and dinner.

My favorite snacks were always the sweets that mami would bake for us. She never failed to whip up something fun and delicious for us to enjoy when we got home. I remember so many great days sitting down to the sweet smell of something baked especially for us. She always knew how to make us feel loved.

Chocolate Churro Muffins with Oreo Chunks

Today, I’m going to show you an extra special treat that you can make for your little ones when they get home from school.

My amazing Oreo Chocolate Churro muffins are warm and soft inside and are rolled in a combination of sugar,cinnamon and crushed oreos. Your kids will love them…and I bet you will too!

Chocolate Churro Muffins
Servings: 2 dozen

Ingredients
  • 1 box chocolate cake mix
  • 6 OREO Cookies broken into pieces
  • 6 OREO Cookies finely crushed, divided
  • 1 cup sugar
  • 4 tablespoons ground cinnamon
Instructions
  1. Prepare bake cake mix following package instructions, stir in pieces.
  2. Bake as cake per cake mix instructions.
  3. While muffins bake, whisk together sugar, ground cinnamon and finely crushed Oreo cookies. Once muffins have baked, carefully remove from oven. Gently roll in Oreo, cinnamon sugar mixture to coat entire muffin.
  4. Place on serving and continue process with remaining muffins. Serve warm with a glass of milk.
