Dulce de Leche Chocolate Chip Cookies
Mi carino has been in Waco, Texas for the last two months.ย My weekends have evolved into an overdose of girl time.ย There have been countless tea parties, breakfast for every meal, glam make-up sessions and way too many fruity drinks laced with colorful straws.ย Have I missed mi carino? With every ounce of my heart, but we needed this, rewind truthfully I needed this.
My girls are quickly growing up, blooming into little ladies and transforming right before my eyes. So when hubby announced he would be leaving us. I silently shrieked with joy.ย My plan for the 2 months and every month from now until the very last minute they leave my side is to connect, establish a solid relationship and enjoy my girls.ย And have I ever.ย Bowls of cereal at midnight, reading in bed until noon, pretty nails in every color and baking,ย lots of baking.
With mi carino coming home soon we decided we needed to squeeze in one more Friday night baking treat.ย Ponytails, socks, One direction music blaring and cookies.ย

Dulce de leche and chocolate chips were the plan for the evening. Fresh from the oven with a glass of cold milk these caramel colored cookies were a hit. These cookies bake quickly, so keep an eye on them and adjust your baking time to your oven. Mine came in at about 7 minutes.

- 1/2 cup butter softened
- 1/2 cup dulce de leche
- 1/2 cup brown sugar packed
- 1/2 cup sugar
- 1 egg
- 1 tsp vanilla
- 1 1/3 cup flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp kosher salt
- 1 cup semi-sweet chocolate chips

Pre-heat oven to 375 degrees

Combine all the dry ingredients, flour, baking soda, baking powder and salt. Set aside.

In a mixer, add the sugars, the dulce de leche, and butter.

Beat until light and fluffy. Add the egg and vanilla and stir until incorporated. Gradually add in the dry ingredients at low speed.

Once the dry ingredients are incorporated in the batter add in the chocolate chips and stir.

Add the dough to the cookie sheets and bake from 6-7 minutes.

Notes from The Dinner Club: The first time I made these cookies I had to throw away the majority of them because I over baked them. This time I baked them for 8 minutes, and it was still a minute too long. But, I didn't have to throw these cookies away. They were just a tad crisp.

Dulce de Leche is a rich and decadent sauce or syrup, similar in flavor to caramel. Unlike caramel, however, which is made by heating sugar, dulce de leche is prepared by heating sweetened condensed milk.
