Choriqueso made from chorizo, onions, and jalapeno, topped with tomato, cilantro and cheese then broiled until bubbly is the ultimate appetizer for entertaining or movie night.
Choriqueso is easily one of my favorite appetizers to serve when entertaining.

WHAT IS CHORIQUESO?
Chori is short for chorizo and queso means cheese – combine these two amazing ingredients and you get choriqueso. You can simply make choriqueso with these two ingredients, pero I like to add some spice, and some veggies to the mix for kicked up choriqueso.
INGREDIENTS NEEDED TO MAKE CHORIQUESO:
Chorizo: Pork or Beef Mexican chorizo
onion
jalapeno
tomatoes
cilantro
Shredded Oaxaca cheese: you can substitute with queso quesadilla or Monterrey jack if you cannot find Oaxaca cheese.
Tortillas or tortilla chips
HOW TO MAKE CHORIQUESO
Making choriqueso is amazingly simple; you cook the chorizo (remove it from any casing) and top it with cheese first, then add the fresh ingredients.
Heat oil in a nonstick pan over medium heat. Add onions, jalapenos, and chorizo to pan, cook, breaking up with spoon until fully cooked, about 5-7 minutes.
In a bowl combine diced tomatoes, and cilantro; stir to combine.
Set aside until ready to use.
Preheat broiler.
With a slotted spoon divide chorizo-onion mixture into four individual serving dishes, top each dish with tomato and cilantro and top with cheese.
Broil until cheese is melted, about 5 minutes.
Serve warm with tortillas or tortilla chips.
HOW TO SERVE:
Serve choriqueso with tortilla chips or warm corn tortillas. I also like to place out additional salsa, pickled carrots, or pickled jalapenos for guests.
If preparing for entertaining I cook & prepare choriqueso, pero wait to broil until my guests arrive, so the choriqueso hits the table warm and bubbly.
Any leftovers can be covered and re-heated again the next day.

- 1 (10 oz) package of Pork Chorizo
- 2 medium tomatoes diced
- 1 cup cilantro washed
- Shredded Oaxaca cheese
- Tortillas or tortilla chips
