Mexican Breakfast Pizza
Mi carino is all about breakfast. It’s his favorite meal of the day, the meal to kick off his day and the energy source to fuel him well past lunch. He often calls me while out running errands to ask if I need any eggs, do I have bacon or are there plenty of tortillas for the next day. For most part his daily breakfast plate is nothing over the moon fabulous – scrambled eggs with spinach and salsa or a quick breakfast burrito to go but on the weekends I do enjoy spoiling him with a hefty, meaty, manly breakfast.
Like I said my man is all about his breakfast.
Enter Mexican breakfast pizza – a crispy tortilla topped with a mix of roasted pepper hummus and refried beans, chorizo, a fried egg with a hefty spoon of salsa and finished off with queso fresco. Talk about kicking off the weekend in style! He couldn’t get enough of them, he devoured two leaving no crumbs in sight.
The Sabra roasted hummus combined with the refried beans worked really well and added a depth of flavor with all that roasted goodness. Lucky for me Sabra recently sent me their home-style salsa that the entire family is addicted to, so adding a splash of the Sabra home-style salsa to this dish was a no brainer.
I crisped the tortillas in the oven to avoid frying and assembled them and placed them in a warm oven until the eggs were ready. These would also make a great meatless dish by topping them with roasted mushroom or sautéed vegetables.
- 4 flour tortillas
- ½ cup roasted red pepper Sabra hummus
- ½ cup prepared refried beans
- Cooked chorizo
- 4 Eggs
- Sabra Salsa – Homestyle mild
- Queso fresco
- Cilantro

Preheat oven to 350 degrees. Place tortillas on a baking sheet and lightly coat with olive oil.

Bake until crispy and lightly browned. While tortillas bake combine hummus and refried beans in a small nonstick saucepan and heat through. Spread each tortilla evenly with hummus-bean mixture and top with chorizo, fried egg, salsa, queso fresco and cilantro.
