Guys Welcome to Selena week! An entire week dedicated entirely to recipes, cocktails, memories inspired by our South Texas Reina Selena Quintanilla. I am SO excited to share this week with you, plus a full recap of the exclusive Raised on Selena dinner I hosted along with Soy Tejana for media and local influencers. Selena was a huge inspiration to me growing up. Her dedication to her music, fans, and creative journey paved the way for Latinas y Tejanas to work hard, hustle and dream big. Yesterday we kicked off the Selena Week by sharing a Tex-Mex Pizza inspired by Selena. Today I’m sharing another Selena favorite – The Olive Garden Salad.
Now, let’s get our bidi bidi bom bom on!
Word on the street is Selena loved visiting the local Olive Garden. Did she order pasta?? The breadsticks? Nope, Selena ordered the Garden Salad. I can understand the fascination. The Olive Garden Salad has become one of the most searched for recipe on the internet. Simply search copycat Olive Garden salad, and thousands of recipes appear.
Selena, she was on to something.
Today I wanted to pay homage to Selena’s favorite salad by sharing the Olive Garden inspired salad we enjoyed at our Raised on Selena dinner. I kept the salad true to the original but did kick it up a notch by serving it with a spicy version of the Olive Garden salad dressing. Once again a Tex-Mex spin because after all, Selena is our Tejana queen.
This Selena inspired Olive garden salad is brimming with juicy tomatoes, salty olives, spicy pepperoncini peppers, crisp red onion, crunchy croutons all tossed with romaine lettuce and topped with that spicy version of the Olive Garden Italian Dressing.
Our salad course of the evening. We served the fresh tossed salad accompanied by the dressing and plenty of croutons.
