WHAT ARE CHIA SEEDS?

Salvia Hispancia (Chia) is an edible seed from the mint family that flourishes in Southern Mexico.

Chia seed are rich ion omega- 3s, high in fiber, have a nutlike flavor and can absorb 10 times their size in weight in water. When added to a liquid, and allowed to steep they form a gelatinous coating, similar to boba in bubble tea.

HOW TO MAKE PAPAYA CHIA AGUA FRESCA

In a blender, add half the papaya, half of water, half the sugar and lemon or lime juice.  Adjust measurements to fit your blender size.

Blend until smooth. Strain, add to a pitcher. I strain directly into the pitcher.

Repeat with the remaining papaya, water and sugar. Strain and add to pitcher.

Add chia seeds and allow to rest for 15 minutes. Allowing the agua to give the chia seeds time to absorb enough liquid, which create a gelatinous film around the seed, so you can drink it effortlessly.

Stir and serve over ice.

Store leftover in the fridge, will last for two days.
