Poblano Breakfast Scramble made with breakfast sausage, hash browns, poblanos and onions is topped with cheese and baked until bubbly. Perfect for breakfast or dinner this hearty skillet dish hits the spot.

Youโ€™ll love my poblano breakfast scramble! Itโ€™s an easy, hearty, one-skillet breakfast filled with breakfast sausage, hash browns, poblanos, onions topped with cheese and baked until bubbly.

Served with scrambled eggs or wrapped in a warm tortilla or piled high for nachos my poblano breakfast scramble is all my favorite things about breakfast in one skillet.

I love one-skillet recipes because they are realistic for a busy weekday meal. I can toss everything in the skillet, sautรฉ, stir, add, and then pop it into a heated oven. Handful of cheese, a sprinkle of cilantro and weโ€™re set for dinner.

 My poblano breakfast scramble can be enjoyed for breakfast, brunch, lunch and or dinner. Frozen hash browns are the star of this one-skillet meal.

I always have a bag of frozen hash browns tucked away in the freezer for a quick and easy breakfast meal. For this recipe I used diced hash browns and it worked beautifully. Store any leftovers, covered in the fridge. Re-heat leftovers in a warm oven or microwave with a damp paper towel.

INGREDIENTS NEED TO MAKE THIS RECIPE 

oil

breakfast sausage- for this recipe I used pork breakfast sausage, but turkey sausage would work well.

poblano pepper, seeds removed and diced

onion, diced

salt

pepper

frozen hash browns – for this recipe I used diced hash browns 

shredded cheddar cheese โ€“ any shredded cheese you enjoy will work in this recipe

cilantro, for garnishing – pickled jalapenos, salsa, sour cream, or pickled carrots would be amazing as well.

HOW TO MAKE POBLANO BREAKFAST SCRAMBLE

Pre-heat oven to 325 degrees.

In a skillet heat oil over medium high heat. Cook sausage, breaking up with spoon until fully cooked.

Remove cooked sausage from pan, add poblanos and onions. Cook until light and translucent, seasoning with salt and pepper.

Add hash browns, stir to combine and cook an additional 5 minutes.  

Return the sausage to the skillet, stir to combine.

Top with cheese and bake in a preheated 325-degree oven for 15-20 minutes.

Top with cilantro, serve warm.

Ingredients
  • 2 tablespoon oil
  • 1 pound breakfast sausage
  • 1 poblano pepper seeds removed and diced
  • 1/2 onion diced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 package frozen diced hash browns
  • 1 cup shredded cheddar cheese
  • Cilantro
Instructions
  1. Pre-heat oven to 325 degrees.
