 Roasted Poblano Scalloped Potatoes

Thanksgiving is tomorrow! Whew!  Are you ready and prepped to tackle one of year’s tastiest holidays? In case you are still looking for a last minute side dish here’s one of my favorite potato dishes that is always a hit with my familia. A twist on a classic my scalloped potatoes are loaded with roasted poblanos and lots of Cacique cheese.  Head over to the Cacique blog to see this recipe and find more delicious recipes featuring one of my favorite cheeses.

This dish can be made in advance, place in the fridge and baked the day of Thanksgiving.  I slice my potatoes with a mandolin, but feel free to use a sharp knife.
