Sautéed Sweet Plantains- Maduros

I’ve been having fun in the kitchen with plantains lately and am really enjoying finding new and exciting ways to cook with them.  My mom rarely cooked with them, so I feel like I’m making up for lost time. Their simplicity to cook, eagerness to grasp any flavor I toss at them only makes them even more lovable and even harder to resist.  Last week we enjoyed them with our lunch and a few dinners, but one chilly evening we decided to sweeten them up and serve them warm with a drizzle of crema and toasted almonds.  We gobbled them up, mi carino even asked for seconds and he’s not much of a dessert guy.  I plan or have been kindly reminded to add this sweet plantain treat to our meal calendar every month.

Recently I was asked to create a recipe using I Can’t Believe It’s Not Butter!® Deliciously Simple™ spread and it was a perfectly delicious excuse to make these sweet plantains again. Thick slices of plantain are lightly sautéed with Deliciously Simple™ that is made with simple ingredients such as canola oil, creamy yogurt and a pinch of salt this sticky good dessert comes together in no time.  Deliciously Simple™ added a touch of creaminess that the entire family enjoyed and was well received the next day over a stack of pancakes.
