Watermelon Lemonade Popsicles

Thick slices of cold watermelon are one of summer’s easiest desserts.  The kids love them and I enjoy the ease of simply slicing and serving.  With summer winding down and with only a few days left until the school year officially kicks off I decided to blend the last of our watermelon, add a splash of lemon and make paletas (popsicles).

Watermelon Lemonade Popsicles

Ingredients
  • 8 cups diced watermelon
  • 1 cup fresh lemon juice
  • 3 cups water
  • 1 cup sugar
Instructions
  1. Combine all ingredients in blender; blend until smooth. Depending on your blender size you may need to work in batches. Strain and pour into Popsicle molds, dividing equally. Freeze, about 4 hours.
