Quick and Easy Honey Nut Cheerios™ Brittle

During the holiday season one thing is certain there will be plenty of homemade tamales and my mom’s famous pecan brittle. She’s been making her delicious brittle for over ten years. She carefully packages the brittle in cheerful tins to give as holiday gifts to family and friends.

Some of my fondest memories are of spending time in the kitchen with my mom making brittle. Always patient, willing to share tips and tricks I cherish those moments we spent in the kitchen. Now with kids of my own I find any opportunity to ask them to join me in the kitchen so that we can create new memories. They love helping me whisk, stir and fill the cake pans with batter.

I thought it would be fun to put a new twist on my mom’s brittle using one of our favorite cereals, Honey Nut Cheerios. We made a quick stop at Walmart to pick up a few ingredients and headed into the kitchen. I found a great recipe over at quericavica.com for an easy brittle featuring Honey Nut Cheerios that I knew the kids would love.

Quick and Easy Honey Nut Cheerios™ Brittle

Ingredients
  • 2 tablespoons butter
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 cup Honey Nut Cheerios™
  • 1/2 cup sunflower seeds
Instructions
  1. Line a baking sheet with parchment paper and spray with nonstick cooking spray.
  2. In a nonstick saucepan over medium-high heat, melt butter until foamy, stir in sugar and salt, and continue cooking until sugar dissolves and becomes golden brown, about 4 minutes.
  3. Carefully remove saucepan from heat, stir in Honey Nut Cheerios™ and sunflower seeds then quickly pour out mixture on prepared baking sheet and with bake of spoon evenly spread into a layer.
  4. Refrigerate for at least 20 minutes, break into pieces, and serve.
