Oven Baked Barbecue Chicken with Coffee Barbecue Sauce

Let’s talk chicken, BBQ chicken to be exact. I love it! Messy, sticky, delicious, stick to your ribs bbq chicken is a summer favorite. Nothing makes me happier than firing up the grill to grill up a great meal of bbq chicken. The only problem we are up to our necks in rain. South Texas has been hit with endless showers, thunderstorms and a few tornado warnings which means the grilling will have to wait, at least for now.

Let’s face it nothing can replace a great outdoor barbeque. But some days you have no other choice. I went online to search for some inspiration and found a great recipe for grilled chicken with chimichurri from El Mejor Nido.  I also spotted a recipe for orange tangerine adobo chicken that I knew my family would love.  After searching the site for a few more recipe ideas I headed into the kitchen for another cup of coffee and it hit me, of course my homemade coffee bbq sauce. A rich, dark flavorful sauce that adds the perfect zing to my chicken giving it that comforting, outdoor grilled flavor.

A few items from my pantry, a few minutes on the stovetop and the sauce was ready. This sauce comes together quickly, can be made days in advance and works well with anything from chicken, to pork to ribs.
I decided to bake my chicken in the oven and was super pleased with the results. Out came the crispiest, most perfectly glazed, sticky, sweet, tender baked chicken. Earthy from the Nescafe Classico coffee, rich from the balsamic sauce and sweet from the ketchup the chicken was fall off the bone tender.

Oven Baked Barbecue Chicken with Coffee Barbecue Sauce

Ingredients
  • I cup coffee brewed from Nescafe Classico instant coffee
  • 2 tablespoons brown sugar
  • 1 cup ketchup
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ancho powder
  • 2 teaspoons black pepper
  • 1 1/2 tablespoons balsamic vinegar
  • 1 1/2 teaspoons lower-sodium soy sauce
  • 4 pounds chicken leg quarters
Instructions
  1. In a non stick saucepan combine coffee, brown sugar and ketchup bring to a boil. Reduce heat stir in onion powder, garlic powder, ancho chile powder, salt and pepper, simmer until sauce thickens, about 10-15 minutes, stirring occasionally. Once sauce has thickened to coat back of spoon, remove from heat and stir in balsamic vinegar and soy sauce. Allow to cool.
  2. Preheat oven to 425 degrees. Line a baking sheet with foil and liberally spray with nonstick cooking spray. Place leg quarter on baking sheet and brush chicken with bbq sauce. Bake for 1 hour 30 minutes or until juice run clear, basting with bbq sauce every 30 minutes.
