Remember the keep laughing mood I spoke of so highly in my previous post? Well I am relentlessly trying to keep that mentality; you see my oven went bust. A home cooks worst nightmare. I love my oven and after living 2 years in an apartment kitchen cooking with electricity I longed, dreamed and eagerly awaited coming home to my mighty gas oven. The first weeks went off without a hitch. I braised, baked and broiled and even heated leftovers giddy with excitement. Then “poof,” it was out. After I picked myself off the floor I realized one… Read More
Coca Cola Balsamic Marinated Bermuda Onion
I was recently asked to join in on a live broadcast with Chef Eric Lackey from Flamestone American Grill in Oldsmar, Florida. Chef Lackey was the winner of the Walmart Choice Steak Challenge hosted by Wal-Mart, Kingsford and Coca-Cola that kicked off the grilling season and introduced the Walmart’s new line of top quality USDA Choice Steaks. Here are a few tips I learned from the broadcast: Steak should be at room temperature to ensure optimum grilling Just before grilling, pat the steak dry, brush on light coating of vegetable oil or olive oil, and season as desired Wrap… Read More
Agua de Chayote
We have had a few bumps along the way with our move. A new AC install, floors in need of repair and electrical issues. A few headaches, long days of unpacking and plenty of laughs. Because really what can you do? Be miserable or laugh and keep working. We chose laughter. To ease the long days we topped of our tall glasses with refreshing goodness. Aguas are the perfect mid day beverage to rejuvenate the body. Agua Frescas (fresh waters) are made with fresh fruit and a mix of vegetables or seeds. Prepared agua fresca drink mixes can be found in the Latin section of your grocery store, but I find… Read More
Cumin Citrus Fajitas
Cumin Citrus Fajitas BBQ season is quickly approaching and the excitement has me craving the flavors of summer. I love grilling! Grilling means school is out for the summer, less day to day rush and plenty of time outdoors. Spending time outside in the fresh air, the warm sun, kids playing and the adults gathered around the grill. Grilling evokes low key, relaxed cooking and family time. As the temperature rises our grilling takes on a summer spin. Light, easy and exploding with flavor. Fuss free grilling is possible with a bit of planning. Marinate your meat and veggies… Read More
Avocado Pasta Sauce
I love avocados. Whether sliced over a taco, sandwiched between a crusty bollio, cubed over a bowl of beans or smashed with serranos over a stack of homemade corn tortillas chips avocados are amazing. For a small package they sure pack a punch. Did you know? Avocados from Mexico supply nearly 20 vitamins, minerals and phytonutrients, including potassium, vitamins B6, C and E, folate and fiber Mexican avocados have the “good” fats – mono- and poly-unsaturated fats that make avocados a good alternative to foods that are rich in saturated fats like dairy and mayonnaise. What’s not to love?… Read More
Dulce de Leche Cake
Dulce de Leche Cake Mi cariño graduates today! I am bursting with pride, happiness and overwhelming joy for him. Today he receives his Master’s Degree in Social Work. I find myself tearing up just thinking of the bumpy road that lead us to this day. After 9/11 my hubby like many dedicated men and women enlisted in the Armed Forces. He enlisted with the Army, headed to boot camp, then Medical Training School and finally moved our family to Fort Hood. He deployed in March to Iraq and school was ultimately put on hold. After his return life went on, our second… Read More

Tlayuda {Giveaway} with @IMUSAUSA
Tlayuda A Tlayuda is a popular street snack in Oaxaca. This street snack consists of an over sized thin corn tortilla grilled over hot coals until crunchy. A thin layer of asiento (pork fat) and refried beans serve as the base. Toppings can include shredded cabbage, chorizo, thin slices of precooked meat or pork, onions, rajas, cheese, cilantro, avocado and salsa The tlayuda may be eaten opened faced or folded in half. Often compared to a Mexican pizza they are an ideal party food. I thought they would be perfect for Cinco de Mayo. Imagine a complete table laced with bowls of endless… Read More
