To make hibiscus salt for rimming cocktails you first want to break down the dried hibiscus leaves. I do this by crushing them with sugar in a molcajete, but you can use a food processor or coffee grinder. The sugar helps to finely break down the hibiscus leaves and also tints the sugar to create a deliciously crimson-hued salt rim. Once finely ground add salt to taste. Some prefer a sweeter salt rim, others prefer a salty rim – add salt by the tablespoon, mix and adjust to taste.

- ¼ cup sugar
- ¼ cup dried hibiscus
- Salt

Place sugar and hibiscus in a molcajete, food processor or coffee grinder. Grind until fine. Add salt by tablespoon to preferred taste. Use to rim glass for cocktails, store sealed in pantry.
